Wagyu Beef Brisket, cut from the front quarter underneath the (throat) is a large cut that takes up about 1.55% of the Wagyu carcass. When this beef brisket is slow-cooked, it becomes crazy juicy and packed with intense taste and the tallow serves as a perfect glaze! Generally, brisket takes up to 8 to 10 hours to smoke on low heat, 1-2 hours in a pressure cooker, or 5 hours in the oven, depending on the size of the brisket.
